Acorn squash sliced and cooked on the barbecue taste wonderful and takes a lot less time to cook. Give it a try. I brush with olive oil, spices and maybe a hint of vinegar.

these whole grain packets from HEB grocery stores are great. Lots of healthy complex carbs to fuel your glycogen stores, and they microwave up in 90 seconds. Today for lunch, I’m eating them plain with a small salad, but I frequently use them as a rice or pasta substitute when my wife cooks a stir fry or spaghetti
