I have this stretch showing up on the calendar and the app. Does that mean I need to stretch or is the training a “stretched” training?

It means that given your current Progression Levels (shown in your Career page) the workout would be a Stretch for you.
Stretch is usually a Workout Level more than 1.0 greater than your current Progression Level. Might not be exact, but give you the idea.
