I LOVE carbs...but which ones and when?

I have increased my carb intake on and off the bike.
Substantial gains in power, endurance, weight loss, mental state etc.
It has been AMAZING.
Can someone comment on prioritizing the types of carbs I.e. simple carbs vs complex carbs and timing of each?
Simple sugars, gels, honey, pasta, muesli etc…what to eat and when, especially on a daily basis or recovery week.
