There is much more to a bike than any single dimension, but broadly speaking (and for comparing bikes that are nearly equal in all other dimensions) lower BB height gives some more “stability” and less “tippy” feeling.
It will also corner a bit better with the lower center of mass, which is why lower BB and shorter cranks are taking hold in MTB specifically. Of note, this matters more with high load on the cranks as in an outside pedal weighted corner, or when standing on the pedals (little if any weight on the saddle).
