Is there any copyright issues with uploading cycling highlights (with my own ‘original’ audio) to youtube?
I see many people do it but this wouldn’t be for any analysis as such.

Maybe. I know Lanterne Rouge mentions he licenses cycling content for his YouTube race analysis videos, which would imply there is a copyright issue, but I’m not a lawyer.
