Rice Cake Crumbling Prevention!

Do not wash the rice as much or just don’t wash it at all and use a rice cooker. When you refrigerate or freeze the rice cakes they starch breaks and they will crumble. Also, rice balls hold better than cubes or rectangular prisms.

You should use Calrose or Nishiki, anything else is less delicious and less starchy.

I think I read it somewhere in Feed Zone Portables, but I found that blending my rice cake mixture before packing it into a pan/cooling it helped a lot with it staying together. Also, if you can move through them fast enough, keeping them in the fridge instead of the freezer has yielded good results for me.
