We’ve got a snowstorm about to hit us up here in Massachusetts. So I will probably have quite a bit time over the next few days. I’m currently on MVSS. Is there any benefit/downside to doing a 2.5h endurance ride in place of one of the 1.5hr ‘weekend rides?’

If you’re good at recovering why not both? Add an hour to the end of the workout at 65%.
