I am testing screencasting and a wired connection from my iPad to a large TV screen for my workouts on a large 36” screen
What size TV screen do you use ?

I have a 50" TV and it works with Cast ok. However an HDMI cable is much better and is what I use.
However, I use a PC. Not sure about iPad connections.
TV size is a function of how much space you have and what you are watching. When I’m just doing a workout and listening to a podcast, I use my phone. When I’m watching a movie, I use a cheap 75 inch TV.
Whether casting or wired, TV should not change anything about the quality of the connection. Resolution might, but your sending device should not care about absolute size.
I cast from an ipad to a 40” mounted maybe 30” in front of me. I have mesh wifi and have never had any issues with drop outs.
Does the display from the iPad fill the screen?
