I currently have a Wahoo Kickr Core that I use with a 12 speed Shimano 105 cassette on with an Ultegra DI2 drivechain bike.
I’m interested in buying a gravel bike for some winter fun, but want to make sure its drivechain is compatible with the trainer to make things easy to swap around.
I use the trainer exclusively in ERG mode, so no need to shift gears, etc.
Would there be any issue in using a SRAM Rival or Shimano GRX 1by setup with the existing 105 cassette on the trainer if I’m not changing gears due to ERG mode?

Shimano 12-speed components will be compatible, although if you are opting for a 1x setup your chain might be a tad longer than desirable on the trainer.
With other combinations, it is usually a matter of “finding a gear that works.” Honestly, if you are only in erg mode, I’d get a Zwift Cog and call it a day.

BTW, there are signs on the horizon that trainer manufacturers will eventually enable virtual gearing. That’d be amazing, because it’d greatly simplify the setup. My wife and I could use the same hub and cassette (I have SRAM while she has Shimano).

I use a 12-speed Shimano road cassette on my KICKR with my MTB.
The cassette isn’t technically compatible with my derailleur according to Shimano, but since I’m using ERG mode, not shifting, and they’re both 12-speed there are no issues.
You should be able to use any 11/12 speed Hyperglide cassette on your KICKR with any 11/12 speed Shimano groupset.
If you’re using Sram, you can swap the freehub out for the XD one.
I’m not sure if a really big cassette would fit on the KICKR, but again, you don’t need that gear range for ERG mode. Just put anything that matches your chain (11-speed cassette with 11-speed chain, 12-speed cassette with 12-speed chain, etc.).
