Does the wahoo elemnt/elemnt bolt collect all sensor data even if not chosen as a data field to display? For example if I chose not to display cadence or temperature etc, would it still collect the data and send it to my connected apps?
They log all the sensors that are paired. Regardless of if you have them displayed.

Yes it does! In fact, I went for a ride once and completely lost it (walking up hills, panting, weak kneed) on a long hot climb. It was only when I looked at my data afterwards that I realised it was 95-99 F out there. I now have a page on my Bolt with temperature on, so I can keep an eye on it.
