My LBS has a device with lasers and all, too, so I am sure it can be done.
For the record, he was doing a bike fit over 3 hours. The rest of the bike fit was very close already, but the cleats made a big difference.

Expect alot of knee pain for absolutely no gain. Personally even with red look cleats if I get the placement wrong I can experience knee pain and that’s with the maximum available float.
I feel like I have the opposite experience. Zero float are awesome to me and feel more natural but take a bit to get right. I guess for me….when in any other activity do my feet rotate on the ground while I’m pushing?..none that I can think of, the foot stays planted. Squats, soccer, running, etc… Float let’s things twist which I want no part of.
Pronation is a thing, your foot typically does rotate while you walk and run. When you play soccer, rotating your feet is essential when taking shots and stopping.
