Breakfast ideas, MTB ride starting mid morning

Looking for suggestions and timing.

During the year, I’m normally up around 5:30-6:00 daily…I’m 49 if that helps.
Typically I’m on the bike (MTB) around 7:30-8:00 during the spring and summer.

We are in late fall/early winter now on the East Coast, and we just got our start of cold mornings.
This pushes my ride times back at least two more hours due to temps.
Normal rides are 2-3 hours, no hard intervals, but I’m not putting around. I don’t train with power anymore, so I can’t calculate KJ.

This morning I got up at my normal time, and went to making breakfast. Knowing I’d be riding.
Two eggs
Two servings of Birch benders classic pancakes, PB fit serving mixed in. Half a banana with honey.
Mix usually produces about four pancakes about 5inches in diameter. This would have been 6:30am or so.
My wife and I had to run to Lowe’s, and I figured I might be able to get on the bike around 9:30-10:00.
When we got to Lowe’s, I break out in a sweat, couldn’t figure it out. My dad tells me he does this when his Blood Sugar drops.
Questions:

  1. Do you think I ate enough? (150-155lbs)
  2. Does this sound like my sugar dropped?
  3. Would something like oatmeal be more of a steady release carb source?

I did grab a Cliff Protein Bar while in Lowe’s and ate that on the way home. Once on the bike I felt okay, but did feel hungry. Got in about 2 hours.

What did you eat yesterday? Assuming you celebrated Thanksgiving yesterday, did you over or under eat from your normal? Was your eating schedule off? Too much alcohol?

Did not overeat, no alcohol.
Dinner was left over dark meat turkey, sauteed with peppers and zucchini over jasmine rice.

Nothing overly different from normal.

I’m trying oatmeal this morning for pre-ride to see how that feels.
