Curious, are you not doing threshold work?
I am doing threshold work 1 day a week, but mainly for training data for FTP. I typically have been prioritizing VO2 Max training, anaerobic, and longer zone 2.
Most of my prior riding has been from bikepacking and touring, and trying to train that. I was able to do a ton of volume, but ended up plateuing. Threshold doesnāt really seem to benefit my riding much as I donāt really need to go at max power for more than 5 minutes in my riding. I do anaerobic because I live and ride in a city, where being able to do fast bursts is beneficial.
