I have a System Six with a SRAM Red 160mm rotors. Is it possible to change to 140mm, more for aesthetics than anything, and if so could i have some help with how to do it.

Depends on your frame and fork along with current brake mounting. If the current brake calipers are mounted with 140mm to 160mm adapters, it could be possible to downsize. So, with more info and likely pics of your actual bike in question, we can get more specific.
Outside of that, it’s important to mention the likely decrease in braking performance. Not everyone needs 160mm rotors, but it’s generally good to have too much braking power than too little. Lots of variables to consider (rider weight, typical downgrade pitch, etc.), so it’s not an absolute. But I would hesitate to run a 140mm on any of my bikes on the front and only on the rear in a few rare cases.
The Shimano SystemSixs cam with 140 on the rear, so that should work.
It is absolutely possible. For the rear, you just need to remove the 160 adaptor that comes already installed on the brake caliper, and instead bolt the caliper directly to the frame. If you wish to do the same to the front caliper, you need to flip the adaptor around.
As @mcneese.chad mentioned, there is a decrease in braking performance with this change, and many people run 160 at the front and 140 at the rear as a middle ground, FYI. I as a 60kg rider still have 160 at the front, because better safe than sorry.
My crux came with a 140 front rotor and it was definitely not enough braking for an 80kg rider.
