Resistance mode for short sprints?

In Erg mode, my Vortex doesn’t handle short, high power intervals since there is about a 1s delay to respond to changes and it takes 4-6s to catch up so the interval often ends up anywhere from -10 to -40W short of target. I have Jepson on the calendar tonight and wanted to ask if resistance may be better and if so what is the gear shift - cadence strategy to hit the intervals better.

Also is it OK to switch between modes during the workout or just leave it in one mode.

I believe Chad covered that on a recent podcast. If you are on pc or Mac there is a keyboard shortcut to flip between the two.
