I don’t know the difference between sim and standard mode. I have a kickr core. It’s about a year old.

Sim only applies if you connect to an app like Zwift, RGT, Rouvy, etc.

Standard is an alternate trainer mode available in the TR app and maybe others.

In case you haven’t seen this, its one of the better articles on the difference between indoor and outdoor:

Weak hips and lack of movement were the big ones for me, along with how the trainer behaves (Erg vs Standard vs Sim).

After thinking about it, probably the biggest factors at fixing the indoor/outdoor gap was strengthening my hips/posterior chain, and adding some movement (InsideRide E-Flex). After all that, I started experimenting with erg vs standard, switched to standard mode, and then switching from standard to sim.
