My Allez Sprint is really just my crit bike and geared that way but with 40c carbon wheels on it, full Ultegra, and carbon Aerofly bars/s-works stem, carbon cages, it weights in just about 16 lbs without pedals which isn’t too bad (I bought it with all of this except the wheels for $1600). If I were making it more of a climbing bike I would probably change the gearing from the 53/39 11-28 that’s on there now but the gearing is the biggest difference between it and my Tarmac, the weight is almost negligible.
All that said, the weight isn’t a huge difference between stock, I mean, pour a bottle out before the climb and you’ve saved about an equivalent weight from a stock Allez. Your legs are what’s going to make the difference in the long run, I would get the gearing right and just cut out weight when it’s convenient for parts you want to upgrade anyways.
Buy her a frame, buy new stuff for your bike and transfer the old stuff to hers, Have a look at your riding stuff a new helmet and shoes are easy ways to loose weight that can transfer to any bike.
Weight obviously depends on frame size, but for a point of reference, I built up a size 54 Allez Sprint rim brake with Ultegra components. It weighs 18 lbs including bottle cage but without pedals.
Light wheels versus heavy wheels. Difference .5 kg, which is .7 procent on 70kg body weight. Only relevant for a pro. Although I do akbowledge that you go faster when you feel good

Really when you put in your data only you can decided what is worth it. For the right climby race I would be a gram counter but for most days/rides I really don’t think about it much.
That is pretty cool. Putting in my values and the particular climb I hit a lot if I took 1kg off the bike I’d be 11 seconds faster. It’s not nothing, but it isn’t much either.
