I have set up a training plan, and even though I selected TODAY as the start date, it is starting me on March 3rd, all of Feb is blacked out. I have ‘deleted’ and re-set up my plan several times and the same problem every time. Any idea how to fix this?

Just above where you took that screenshot on your calendar, do you see the name of your. training plan? If so, click the name and it will take you to the screen where you can edit.
That has nothing to do with a plan. That’s a part of the most recent update. Workouts in that black 28-day window will adapt based on your training and schedule.
Click on Training Plans on the left of your screen and build your plan. It will let you choose today as the start date.
