I don’t include rest stops in the workout on Z1/2 rides. I just stop as needed.

Not really, because I just take any endurance workout I like the general “shape” off and just dial in the “difficulty” according to taste and needs. Often down from 100 % because as alluded to in this and other threads it makes no sense to progress Zone 2 in the way towards ever closer towards and into Zone 3 as TR does with so many of them.
Of course this triggers the “tell us why you struggled to complete” question after the workout but I simply always answer “I did not struggle”. I also couldn’t care less because workout levels have no meaning for me for so many different reasons.
And If I want a longer workout I just click prolong it in the cooldown window.
I do the opposite but with the same intention - start with a low intensity workout (something like Townsend -1) and dial it up depending on how I’m feeling, adding on time to the cool down if I’ve got the time and motivation
Yes, I do that sometimes, too. Despite the myriads of workouts in their library there are surprising gaps or workout types they simply didn’t venture in. Thank god it’s dead easy to manipulate on the fly with the difficulty rating. Also the workout editor is a very good feature. Actually, with workout levels and planner so worthless to me they are among the few things making the TR sub still worth it (albeit only for the grandfathered price and not more, pretty much).
For anything zone 2 or below do you really need to follow a structured workout at all? If riding erg and watching a movie or something, sure some sort of pattern is nice to break things up, but otherwise I don’t think it really matters. My personal preference is either a ‘pressure on the pedals’ ride outdoors, or a motopacing session on TrainingPeaks virtual. Of course neither of these will affect your progression level, but if progression level for endurance is irrelevant, so what.
