Even if you can’t find the specific moment it’s dropping, I’d definitely give the chainring teeth and chain a close inspection.

You’re joking, but this bike has given me quite a bit of trouble in the years, honestly I think NBD is quickly approaching…
And the winner is… chain problem! One chain link was in the process of breaking, and that was the reason of the dropping. Stupidly enough, before going to the shop I did inspect the chain ring and the cog teeth, but it slipped me to check to chain as well. I guess lesson learned.
I had to replace the campy chain with a Shimano one (Campy impossible to find on this island), but hopefully that won’t present compatibility issues (researching online doesn’t seem to suggest it will, and from what I’ve tested this far seems absolutely fine). Thank you all for the help!

Generally speaking (outside of all the hyper-proprietary flat-top strangeness) Shimano chains will work well on a lot of drivetrains, but not a lot of chains will work well on Shimano drivetrains.
Of course, as I mentioned, there are outliers, but generally speaking, this is my experience.
