What's the point of the intervals in endurance workouts?

In many of the endurance workouts plan builder set up for me, there are still “intervals”. For example, in Brecherspitz, it alternates between 55% and 70% FTP. I’m sure there must be a point to that, but aside from preventing boredom, I’m not sure what it is. Is there a reason to split things up like this?

Nailed it. Just to break up the monotony. There are some workouts (James, for instance) that is just an 85 minute single block.

Brecherspitz has a similar structure to some higher level workouts even up into Tempo (and maybe some sweet spot?). This being a lower PL workout it also serves as kind of an introduction to slightly harder workouts. Helps to ease people in who are new to structured training or maybe to using a trainer / ERG mode since sustained intervals can take some getting used to depending on your background.
