Am I right in thinking that a low volume plan is 3 workouts a week, medium is four and high is 5?
Nope
LV is 3, MV is 5 and HV is 6

It gets a bit more complicated when you also look at stuff like:
- Traditional Base = MV at 4-5 per week, HV 4-6 per week, depending on phase
- Polarized Base & Build = LV 3 / MV 4 / HV 6
That ignores Tri stuff that I never dive into.
