I need to ride for about 20 minutes away from home to get to a spot where I can do intervals. As an example today I have a 1 hr. Emerald Vo2 planned but I need to add 20 minutes on each end (maybe more). When using a head unit (and power pedals) should I record three separate rides or just Zone 2 my way to where I start then start the workout , then zone 2 home? I wasn’t sure if placing the intervals inside a longer ride would skew the results.

I definitely find that giving it one long ride confuses it less than 3 medium ones. Remember that it treats outdoor workouts as 100% pass or 100% fail, so if you have an hour workout and do 20 mins of easy riding on each end, it basically just gives you a 100% for the hour part.
For the calculation (and maybe also the prediction) of your FTP it will primarily look at your data (power, HR, etc). The 100%/0% only apply to your progression levels, which themselves only exist for your visual entertainment these days. If the AI determines you can do harder workouts than your PL indicates, it will select those. Same the other way around if you can’t handle what your PL indicates
